Crafting new realities - Gardening
Working in the garden was something I never thought I would be interested in doing, but now that I am focusing on self-care... a garden shall be created. As I start to focus on creating this little bit of Eden in our yard, I hope to share and inspire you all to do the same.

For someone who doesn't know what they are doing... I kicked butt all by myself with this. I tilled the land myself and worked a small patch to see how well it would turn out.
This was the first garden I created by hand and by myself. There were things I would have changed when doing this, but in all fairness you never know what you want to change until you reflect on what you have done.

Savoring life's flavors - Try a New Recipe with Me
Let's start with some easy on a budget items to cook, so if I burn them, it won't hurt the wallet as much. A blog will follow this possible cheesy disaster.
Baked Mac and Cheese with Poblanos
INGREDIENTS

Cooking spray
-
2 poblano peppers (about 8 ounces)

Kosher salt and freshly ground black pepper

1 (16-ounce) package short pasta, such as shells or penne

1/4 cup (1/2 stick) unsalted butter

1 shallot, chopped

1 garlic clove, chopped
-
1/4 cup all-purpose flour
-
3 cups half-and-half

2 Tbsp. Dijon mustard

16 oz. extra-sharp Cheddar, grated (about 4 cups), divided

1 1/2 cups crushed tortilla chips
DIRECTIONS

Step 1: Preheat oven to 350°F. Lightly grease a 9- by 13-inch baking dish. Grill poblanos over high heat or cook directly on the flame of a gas burner, turning occasionally, until charred on all sides, 7 to 8 minutes. Transfer to a bowl and cover with plastic wrap. Let sit 5 minutes. When cool enough to handle, use paper towels or the back of a knife to remove the charred skins. Discard stems and seeds and chop flesh.

Step 2: Bring a large pot of salted water to a boil. Cook pasta two minutes less than the al dente time. Drain.

Step 3: Melt butter in a medium pot over medium heat. Add shallot and garlic. Season with salt and pepper. Cook, stirring occasionally, until shallots are tender, 2 to 4 minutes. Add flour and cook, stirring constantly, 1 minute. Slowly whisk in half- and-half. Cook, stirring occasionally, until slightly thickened, 4 to 6 minutes. Remove from heat and whisk in mustard and 3 cups cheese, 1 handful at a time. Add poblanos and pasta and stir to combine.

Step 4: Transfer mixture to prepared baking dish. Top with chips and remaining 1 cup cheese. Bake until top is golden brown, 17 to 20 minutes. Let stand 5 minutes before serving.

Update on this recipe.... Apparently I do not know how to go shopping properly. I thought I made a list, lost the list and then like a goober, I didn't buy anything on the list that I found crumpled in my pocket because I also went to the store hungry and bought other things. I think I am realistically trying to sabotage myself with the recipe because cooking was never my forte either and gardening takes a lot of effort and is wearing me out. My new goal with this recipe is Monday 5/3/26.
**Another side note, I will be working with strange new veggies and fruits to try my hand on smaller things to get back into the kitchen.

"Try" is the New Goal
I am an Italian and I am not a fan on cooking. I am a lover of nature and dislike the muggy outdoors. Most importantly of all of this is that I am a seeker of experiences and I will go beyond my comfort for a story, a memory and a good laugh.... Join me on new recipe tries and fails as well as outdoor exploration and creations as well as trying new things like foods, crafting, gardening etc. Art is not just painting, sketching, coloring... it is a mindset, a perception, a new escapade, designing and creating new things. Start the adventure with me and then go on your own.

New Chapter - Life Under Construction
My "Try" is starting a new chapter in my life. I am rebuilding my routines, reconnecting to those who I hold dear to me and doing things I have never done or thought of even trying. All of this is new to me and I feel all the feels. For the last 7 years I had one routine, with variations, but consist and safe. I am in a new chapter of unknown obstacles and I know that all of the advice I have given over the years is what I am going to start having to do. I am just as scared as clients were in my office creating new life goals. I am worried about the success and the failures. I am resilient and I am going to keep going forward. This whole endeavor is my "Try," so come along with me and see what happens next.
Part II or for those who do not know Roman numerals 2 -
Trying is rough.... like really rough. I am tired, and keep pushing myself to make sure I follow through with all of the things needing to be completed. I am creating so much content that I feel like I am staying as busy as I can, but it still doesn't make a difference. I am exhausted, my routine is off and it isn't even chaotic to me, just annoying. The chaos that I can manuever in is built around a stable foundation of routine, but I feel like my routine is more forced and not jelling with my natural habits.
I will keep trying though and ultimately that is the realest thing anyone can do. Change is messy and annoying, instability is just as annoying, but knowing that you still wake up every day and give it your all is a part of the growth and development of who you are and what tough stuff you are made of. I am more than this forced temporary retirement, and you all are more than what life is dealing you as well. So let's continue to "Try" together.
Part III or 3
I made it through two weeks of the new job, and I feel so much better. I definitely know that my mental health is better than it was. The anger is still there, but not as eruptive. I have one of my old employees working with me and it is great. Today I am adding a picture that was at the other facility with all of the staff dressed up for Halloween. It is like keeping a piece of all of them with me. The teachable moment of "Try" is still in my head and I want more people to adopt that to their lives. It could be "Try" something new, different, or even weird. Get out of the comfort zone that you created for yourself and go forward with something new.
My life still feels like it is under construction but isn't everyone's. Don't we all have things we are working on or repairing constantly? If you are going through tough changes, reach out to me or people that are in your circle for the support that will help get you through.
Don't be too hard on yourself when things get tough and just know that I care and you can get through it.
